为了解西宁地区的饮食业餐饮具消毒工作的状况，分析餐饮具消毒效果，于1995～1997年用大肠菌群快速纸片法对市区176家饮食业店的1293份餐饮具进行消毒效果监测，结果表明，消毒后餐饮具进行细菌检测合格率总体水平不高，经对几种消毒方法的消毒效果进行分析比较，明确了餐饮具消毒工作应选用正确有效的消毒方法和消毒后的餐饮具应采取保洁措施，防止餐饮具二次污染的重要性，并提出加强餐饮具消毒工作管理及监测的一些对策。 |
